Café owner John Gallagher explains why even the best oven needs back-up...

In the heart of Forest Row is a cheery, bustling café which has offered the residents of this popular East Sussex village a place to congregate and take a break for over eleven years. As Java and Jazz owner, John Gallagher, explains: “Our café serves this community, and gives the oldest, the youngest and everyone in-between somewhere to meet and socialise”. 

The café concentrates on great coffee and great cake, proper Italian gelato from Turin, and authentic Italian hot dishes such as pastas and pizzas. As any food operator knows, an oven is the crux of the matter. But John believes that it is not just the oven that is the key to success.

“It is really important to have a great oven,” he explains. “But you also need the best service and support and people who know they are doing when it comes to installation. The team are delighted with the new decked oven which is easy to operate and to pre-set programmes. They also offer huge versatility and allow the chefs to have each oven at a different temperature, so pizzas can be cooked in one, a pasta dish in another and maybe bacon or even cakes in the third.
